How Do You Make Simple Syrup Spicy?

If you love the pairing of sweet and spicy, making simple syrup spicy is as easy as adding jalapeños to it! You get a great combo of sweet and heat that tastes great.

Ingredients and Variations

a pitcher of water, 2 jalapeños, and a cup of sugar on a grey board.

You only need three simple ingredients for this recipe – sugar, water, and jalapeños. I used two medium-sized peppers and I simply sliced them into rounds without removing the seeds or ribs.

You can use white or raw sugar, just keep in mind that the darker color of the raw sugar will result in a syrup that is darker/browner.

Splenda and non-sugar substances will work to sweeten the syrup but will keep the final consistency very thin and watery.

This is the perfect opportunity to use homegrown jalapeños or perhaps you still have a few bags from freezing peppers rattling around in your freezer from last year? Clear out that space and use that fruit to make this delicious jalapeño syrup for drinks.

If you have leftover fresh jalapeños, use them to make this jalapeño cheeseball or jalapeño popper wontons.

Pro Tips/Recipe Notes

  • If you wear contacts, I highly recommend putting them in before slicing the jalapeños or wearing gloves while cutting them. Ask me how I know! 🙂
  • If you have a low tolerance for spice, either remove the ribs and seeds before simmering the jalapeños or add additional sugar.
  • Looking for a jalapeño cilantro syrup? Add 1/4 cup of chopped cilantro with the peppers and adjust to taste after simmering for 20 minutes.
  • Your simple syrup will last for up to three weeks in the fridge. Do not store at room temperature.
  • Freeze excess jalapeño syrup so that you always have some on hand. Use ice cube trays or small Souper Cubes and transfer frozen cubes to a freezer bag (reusable if possible).
  • To use: start with 1-2 tsp per serving and adjust to taste.
